Palmiers










Ingredients:
Puff pastry-500 g
Cinnamon powder- 2 tsp
Granulated sugar- 3 tbsp

Method:
1. Preheat the oven to 210 degree celsius
2. Divide the pastry into three equal parts.
3. Roll out each part into a thin square.
4. Mix the cinnamon and sugar together.
5. Sprinkle the mixture on top of the pastry on both sides.
6. Roll it out.
7. Roll it inwards on both sides.Sprinkle the mixture again.
8. Now again roll it inwards.
9. Now fold it together.
10. Cut it into pieces.



11. Place it in the fridge for about 15 min.
12. Then place in the baking sheet and bake for about 15 min.

Chicken pakoda


Serves 4 to 5

Ingredients:

Chicken breast- 2
Ginger& garlic paste- 2 tsp
Chilli powder- 2 tsp
Turmeric powder- 1/4 tsp
Garam masala- 1/4 tsp
Coriander leaves- few stalks
Gram flour- 2 tbsp
Onion- 1 medim sized (finely chopped)
Salt- for taste
Oil for frying

Method:

1. Blend the chicken in food processor execpt oil and gram flour.
2. Mix the gram flour and onion with the chicken.
3. Roughly take some chicken in your hand as normal pakoda
deep fry in hot oil till golden in colour.

Chicken Burger


Serves 2

Ingredients:

Chicken breast - 1
Cornflour, plain flour- 2 tbsp
Crushed red chillies- 1 tsp
Pepper- 1 tsp
Ginger garlic paste- 1 tsp
Mayanoisse- 1 tbsp
Lettuce leaves- 2 small leaves
Burger bun- 2

Method:

1. Cover the chicken breast with cling film and flatten it with a rolling pin.
2. Rub the chicken with ginger garlic paste and salt.
3. Mix the flour,chillies,pepper and salt.
4. Cut the chicken into two or three slices.
5. Dip the chicken in the flour mixture, dust it and shallow fry in oil in about medium heat
till the chicken is done.
6. Preheat the oven to 200 degree celsius.
7. Warm the bun in the oven for about 3 to 4 mins.
8. Cut the bun into half, spread the mayanoisse, place lettuce leaves and then chicken on top
of it, place the other half of the bun on top of the chicken.
9. Serve it hot.

Bitterguard fry


Ingredients:

Bitterguard- 3 medium sized
Chilli powder- 1 tbsp
Turmeric powder- 1/4 tsp
Salt- according to taste
Gramflour- 2 tsp
Oil for frying

Method:

1. Slice the bitterguard into round pieces.
2. Mix all the ingredients together except oil.
3. Shallow fry in hot oil.

Capucinno Cake


Ingredients:

Selfraising flour- 225 g
Butter- 225 g
Caster sugar- 225 g
Eggs- 4
Cocoa powder- 1 tsp
Coffee powder- 1 rounded tbsp

Icing:

White chocolate- 100 g
Butter- 50 g
Icing sugar- 175 g
Milk- 3 tbsp

Method:

1. Preheat the oven to 180 degree celcius (fan oven 160 degree celcius).
2. Grease and line a 2 lb loaf tin.
3. Cream the butter and sugar well, then add the eggs one by one at a time.
4. Sift the flour and baking powder into this mixture and mix it until smooth.
5. Mix the cocoa and coffee powder with two tbsp of warm water.
6. Pour the coffee mixture into the cake mixture and mix it until smooth.
7. Pour the mixture into the prepared tin and bake for about 40-45 min or until a skewer
inserted comes out clean.

Icing;

1. To prepare the icing break the chocolate into small pieces.
2. Place the butter, chocolate and milk in a bowl over a small saucepan
of simmering water.
3. When the chocolate and butter is melted completely mix it well and
take it of from heat.
4. Sift the icing sugar into the chocolate mixture and mix it until smooth.
5. Spread the icing on top of the cake, dust it with some cocoa powder.

Carrot Cake


Ingredients:
Selfraising flour- 225g
Light muscovada sugar- 225g
Sunflower oil- 250 ml
Carrot- 200g
Ground nutmeg and cinnamon- 1/2 tsp each
Eggs- 3
Orange zest- 1 tsp

Icing:
Full fat cream cheese- 200g
Golden icing sugar- 40g
Unsalted butter- 60g
Walnut or pecan nut- few pieces to decorate

Method:
1. Preheat the oven to 180 degree celcius(fan oven 160 degree celcius). Grease and line two 18
cm sandwich tins.
2. Mix sunflower oil and sugar with a hand held electric whisk.
3. Add the eggs one by one and mix it well.
4. Sift the flour,spices and orange zest and gently fold in together.
5. Fold in the grated carrots.
6. Pour into the prepared tins and bake for 30 to 40 min or until a skewer comes out clean.

Icing:
1. Beat the cream cheese and butter until light and fluffy.
2. Sift in the icing sugar and mix it well.
3. Place one cake on the serving plate spread the icing on top of it.
4. Place the other cake on top of this cake spread the remaing icing on top of the cake.
5. Sprinkle some walnuts or pecan nut on top of the icing.

Chicken varuval


Ingredients:
Chicken- 1/2 kg
Onion- 1 medium size
Cinnamon- small stick
Cardomon,cloves- each one
Ginger& garlic paste- 1 tsp
Aniseed(sombu)- 1/2 tsp
Chilli powder- 1 tsp
Coriander powder- 1 tsp
Turmeric powder- 1/4 tsp
Cumin powder - 1/4 tsp
Aniseed(sombu) powder- 1/4 tsp
Salt - to taste
Oil- 2 tbsp
Few coriander leaves for garnish

Method:
1. Heat the oil in a pan.
2. Drop cinnamon,cardamon,cloves and aniseeds. Then add ginger& garlic paste.
3. Now add onion and fry till it becomes soft and brown, don't burn it.
4. Now add chicken and cook for a while.
5. Now add all the spices and cook in medium heat, do not add much water, if required add a
little bit. Cook until well done and oil separates.
6. Garnish with few coriander leaves.

Chicken fry


Ingredients:
Chicken- 7 thighs
Pepper- 1 tsp
Egg- 1 beaten slightly
Ginger garlic paste- 1 tsp
Flour- 1/2 tbsp
Breadcrumbs- 3 tbsp
Salt- according to taste
Oil for frying

Method:
1. Apply ginger garlic paste,pepper and salt to the chicken.
2. Dip the chicken in flour and dust the excess flour
3. Then dip the chicken in egg and coat with breadcrumbs.
4. Place the chicken in the fridge for about 15 min so that the chicken holds the bre.adcrumbs
well.
5. Now fry the chicken in medium heat until golden brown and well cooked.

Optional:
1. If you want You can add some dried red chillies or fresh herbs to the bread crumbs.
2. If you are making fresh bread crumbs add coriader or mint leaves when blending the breadcrumbs

Pizza


Pizza

Pizza Base
Ingredients:
Strong white bread flour- 175g
Water- 150ml
Olive oil- 1 tsp
Active dried yeast- 1 tsp
Sugar- a pinch
Salt- a pinch

Method:
1. Mix all the dry ingredients together.
2. Pour the wet ingredients mix it together to form a smooth dough.
3. Now turn it to a floured work surface and knead it for a while.
4. Then place the dough in a clean oiled bowl and leave it rise in a warm place for about 1-1 1/2 hrs.
5. Now it's ready.

Sauce:
Ingredients:
Tomato-4
Onion-1/2
Garlic- 3 to 4 cloves
Tomato ketchup- 1 tbsp
Olive oil- 4 tsp
Oregano- 1/2 tsp
Pepper- little bit
Salt- to taste
If you want you add chilli powder for a little kick but don,t add too much.

Method:
1. Heat the oil in a pan.
2.Add finely chopped garlic and onion
3. Fry it for a while don't let them brown
4. Now add the tomato finely chopped,close the pan
5. When the tomatoes has become soft, add ketchup,oregano,salt,pepper and some water.
6. Leave it to boil and thicken for a while then switch off.

Toppings

Ingredients;
Other than cheese i have used some selection of ingredients but you can use it according to ur choice.
Parmaesan cheese-4 tsp
cheddar cheese-1 tbsp
Mozarella cheese-2 tbsp
If the cheese doesn't cover the base completely please add some more.

Other toppings:
tandoori chicken
Black olives
pineapple
green pepper
Pickled chilles
onion

To make the Pizza
1. Preheat the oven to 240 degree celsius
2. Roll out the dough into a circle.
3.Spread the sauce on top of it
4. Spread the cheese on top of it
5. Spread the toppings
6. Bake for 15 min.
7. Serve hot.

Chocolate and peanut butter swirl















Preparation time-15 min
Cooking time- 10 min

Makes about 72

Ingredients:
White chocolate - 360 g chopped
Smooth peanut Butter - 140 g
Milk chocolate - 400g chopped

Method:

1. Grease 20cm/ 30 cm lamington pan, line base and sides with baking paper.
2. Melt the white chocolate over a bowl of simmering water i.e. place a glass bowl on top of
a saucepan of simmering water.
3. When melted cool for 5 min then stir the peanut butter.
4. Now melt the milk chocolate and cool for 5 min
5. Drop alternate layers of white chocolate mixture and milk chocolate into the prepared pan.






6. Gently shake the pan. Run a skewer front backwards to create a marbled effect.


7. Leave it to set and cut into small squares.

Double Decker mud cake



Preparation time-30 min(plus standing time)
Cooking time-1 hour
Oven Temperature-150 degree Celsius,gas mark 1-2

Ingredients:
Butter - 250g chopped
White chocolate -150g chopped
Caster sugar -440g
Milk - 250 ml
Plain flour -225 g
Self raising flour - 75 g
Vanilla essence -1 tsp
Eggs - 2 beaten slightly
Cocoa powder - 2 tbsp
Milk chocolate - 600 g chopped
Cream- 250 ml

Method:

1. Preheat the oven
2. Grease two deep 20 cm round cake tin,line base and sides with baking paper.
3. Combine butter,white chocolate,sugar and milk in medium saucepan, stir over low heat,without boiling until smooth. Transfer mixture to large bowl ,cool 15 min.
4. Whisk sifted flour into the white chocolate mixture, then whisk in essence and eggs.
5. Pour half the mixture into the prepared tin. Whisk the cocoa in the other half and pour into the other tin.
6. Bake for 50 min . Remove it from the tin and cool it in the wire rack.

For Icing:
Combine milk chocolate and cream in medium saucepan over low heat until smooth.
Transfer to another bowl, cover and refrigerate stirring occasionaly until mixture is of spreadable consistency.
Split each cooled cake into half. Place one layer of cake spread the icing,repeat alternate layers.
Spread the remaining icing on top and sides of the cake.
