5 mistakes to avoid if you want the perfect pancakes

Spread a player of peanut butter on one side of the other half of the apple slice and lay that on top of the marshmallows. The end result will look like a big toothy grin!

Tombstone Pudding:

Fill a clear cup with chocolate pudding. Crush oreos and spread that on top of the pudding. Take a Nutter Butter, Vienna Cake, or any other kind of long, rounded cookie. Write RIP in icing on the top of the cookie and place that in your pudding ground! It is a chocolaty, yummy treat that everyone can enjoy.

Pumpkin Cupcakes:

There are plenty of ways to decorate your favorite kind of cupcake (we suggest pumpkin) to give it that creepy edge. You could go for an orange icing and decorate each like a jack o lantern. This would be a great activity for your child and their friends. Have the orange iced cupcakes ready to go and let them go to town drawing on faces with black icing! Or for a cool spider web effect, after icing your cupcake in your desired color, draw 4 circles with a contrasting color (like the rings of a tree). Take a toothpick and starting in the middle draw a line to the outside like the spoke of a bicycle wheel. The resulting effect will look like a web!

Dark Chocolate Graham Crackers

Yep.  These would be amazing for s’mores. 

I doubt you’d even need additional chocolate bars… although, who can say no to extra chocolate, right?!

The recipe is simple and takes no more time than making your own crackers

We loved snitching them from our snack drawer, and they also worked great in our Carvel Ice Cream Cake copy-cat recipe.  Yum, yum!

Dark Chocolate Graham Crackers – Adapted from Elise Bakes

Ingredients

  • 1 1/2 C white whole wheat flour
  • 7/8 C powdered sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 C dark chocolate cocoa powder
  • 6 T butter, softened
  • 1 T honey
  • 6 T milk

Directions

Begin by sifting together 1 1/2 C white whole wheat flour with 7/8 C powdered sugar, 1 tsp. baking powder, 1/4 tsp. salt and 1/2 C dark chocolate cocoa powder. 

Using a fork or pastry blender, cut in 6 T softened butter.  Keep working at this step… it takes time.  Don’t give up early. 

Mix together the 1 T honey and 4-6 T milk; add slowly to the mixture. 

Pack the dough together in a ball; when it sticks, you’ll know you have your base ready. 

Break off some dough in small chunks.  Roll out the dough to 1/8 – 1/4 inch thickness.  

Place on parchment paper.  Then, cut the dough into 1 1/2 – 2 inch squares; or if you prefer, make them look more like graham crackers. 

Poke them with a fork. 

Bake on parchment on a cookie sheet in a pre-heated oven at 325 for 12-15 minutes. Check after 10 and remove any crackers around the edges (which seem to always get done faster than the others!). 

Split apart the center crackers and spread them out for the last few minutes of baking – it will help them get crispy. 

Remove from the oven and transfer the crackers to a cooling rack. After about 5 minutes on the rack you’ll be able to tell if the crackers are crispy enough.  If not, simply return them back to the oven for additional baking.

Repeat until all the dough is used. 

Store in an airtight container for up to 2 weeks (although they won’t last that long!). 

Like I said… they would make excellent S’mores!

How to Make Homemade Chocolate Icing

Granulated sugar - 1 cup

Cocoa - ¼ cup

Mom’s Old Fashioned Potato Salad

Every summer I look forward to my mom’s potato salad. 

She got the recipe from the best man in my parents’ wedding (well, his wife, actually).  It’s been a family favorite as long as I can remember. 

Mom’s Old Fashioned Potato Salad – From the Braunwarths

Ingredients

  • 1 1/2 T sugar
  • 1 1/2 T vinegar
  • 1 T mustard
  • 1 tsp. salt & pepper (more or less, to taste)
  • 3 T mayo (we use olive oil mayo)
  • 3 T whipping cream
  • 1/2 C chopped onion
  • 1/2 C chopped celery
  • 1/2 C chopped red or green bell pepper
  • 2-3 hard boiled eggs, chopped
  • 4 C diced potatoes
  • 3-4 sprigs of chives, chopped

Directions

Begin by peeling and dicing potatoes, until you have about 4 C.  Cubed potatoes or sliced potatoes (about 1/4-1/2 inch thick) cut into quarters work well.  We’ve been using the Yukon Yellow Gold potatoes recently and they have been very tasty in this potato salad.  Boil the potatoes in well-salted water until tender.  Drain.  Cool. 

Meanwhile, finely chop the onion, celery and red bell pepper until you have about 1/2 C of each.  If you are like me and need to eat “cooked” veggies, blanch the veggies in boiling water for 2-3 minutes, and then chill in ice water.  Drain and pat dry.  Then, add the veggies to a large refrigerator safe, covered bowl.  If you don’t need to cook the veggies, than just add them immediately to the bowl. 

Combine the 1 1/2 T sugar and vinegar in a smaller bowl.  Stir well.  Add in 1 T mustard, 3 T mayo and 3 T cream. 

Peel and chop the egg.  To make the salad healthier, use three eggs – but only use the egg whites from each egg. 

When potatoes are cooled, add them to the bowl with the veggies.  Stir well. 

Pour the vinegar sauce over the top.  Stir well. 

Stir in the chopped hard boiled eggs and chives. 

Season with salt & pepper. 

Enjoy!

**Note: If you don’t like celery, omit and use all bell peppers.  If you don’t like bell peppers, omit and use all celery!

Broccoli & Squash Sauté

This simple side dish combines some of our favorite veggies in new ways.  It’s amazing how refreshing a new side-dish combination can be! 

Served warm or chilled, this side dish was a hit at our house. 

Broccoli & Squash Sauté – Inspired by Multiply Delicious

Ingredients

  • 1 medium zucchini
  • 1 medium summer squash
  • 2 C broccoli
  • 1 tsp. minced onion
  • pinch of minced garlic
  • 3 roma tomatoes (or cherry tomatoes)
  • 1/2 tsp. oregano
  • pinch of salt & pepper
  • dash of paprika

Directions

Begin by dicing the veggies.  I quartered the zucchini and summer squash, along with the tomatoes.  Set aside. 

Next, place 2 C broccoli (fresh or frozen) into a skillet with 2-4 T water.  Cook for 5 minutes until crisp tender.  Remove broccoli from the pan to a cutting board and allow it to cool.  Drain any excess water. 

Lightly spray the bottom of your skillet with olive oil.  Toss in the zucchini, summer squash and tomatoes.  Sauté for 5 minutes until tomatoes and squash are soft. 

Dice up the broccoli and toss that back into the skillet. 

Season with oregano, minced onion and garlic, salt, pepper and paprika. 

Serve warm.

We had quite the week – some travels, time with family and friends, and lots of storms!  The first day of summer greeted us with this:

We were out of power for about 8 hours, so that in turn meant cleaning out the fridge.  It’s so hard to throw out food!  But, if that’s all we lost in this round of storms, I am thankful.  We had neighbors and friends who didn’t fare so well, and some still without power. 

Trees on cars and houses, flooding and more damage were wide spread across the cities; we’re hoping we can salvage our tree thanks to our neighbors who helped us get it tied upright again. 

Here’s hoping this week is a quieter one!

Gluten-Free Baking - A Journey into New Territory

Gluten-Free foods are taking their place in the world these days. We are all becoming more aware of gluten, gluten intolerance, celiac (or coeliac) disease, and what this means for so many people. While I am not gluten intolerant, I often cook and bake for functions, locally. Last year I was asked to provide little treats for a Princess Party, put on by the Dacotah Prairie Museum. Accompanied by a "queen", little girls from tots to teens were invited, to learn about the lives of real princesses. They were taught how to wave properly, and curtsey.

Little girls hear the word "princess" and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the little princesses and her queen were gluten intolerant, and couldn't partake of many of the little treats. This was an intolerable state of affairs! I decided I needed to learn about this disease, be aware of what was involved, and provide alternatives that would be tasty and exciting.

Over the past year, I have been trying out different gluten-free flour mixtures, and making lots of goodies, mainly from my own normal recipes, converted by simply substituting gluten-free flour and adding xanthan gum. In the main, they have been a whopping success. In my honest opinion, as someone who has been baking for 42 years, some of the cakes, fruit or nut loaves turn out more moist and tender than when made with wheat flour; a very happy discovery, without a doubt. The "queen" mentioned above, works at the museum, so I took an afternoon to talk with this young woman and learn more about what was involved. I also had baked one of my favorite coffeecake recipes, gluten-free and took it for her and the museum staff to try. They all loved it; moist and tender and full of flavor. The young woman was happy with my experiment, as was I.

Another great help along the way was finding Shauna Ahern's "Gluten Free Girl" website. I have studied her site extensively and learned all sorts of things there. I mixed up her gluten-free flour mixture to experiment with, as well as trying out one of her bread recipes; another success. I took some of the bread for the woman at the museum to sample, as well as a slice I slathered with homemade pesto and cheese and broiled. She exclaimed, "This is the best bread I've tasted since going gluten free!"

This coffeecake recipe was given to me by my best friend of 54 years, and is a terrific recipe, no matter which flour you choose. This is the original recipe; for gluten-free, I substituted a gluten-free flour mixture made up of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. I used this mixture measure for measure in this recipe, and added 1 teaspoon of xanthan gum to the sifted dry ingredients. Be sure to check the labels of ingredients for hidden wheat when making this Gluten-Free!

Bundt Coffeecake

1 cup unsalted butter

1½ cups sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla

½ teaspoon baking soda

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup chopped nuts; walnuts or pecans are good

2 teaspoons sugar

½ teaspoon cinnamon

Preheat oven to 350 degrees. Cream the butter and sugar until light. Add the eggs, sour cream and vanilla and mix well. Sift together flour, soda, baking powder and salt. Add the dry ingredients to the wet and mix well. Grease a 10-inch tube or bundt pan.

Mix together the chopped nuts, the 2 teaspoons sugar and the cinnamon. Sprinkle ½ of this topping into the greased pan. Put in half the batter - this requires "plopping" small spoonfuls of the batter into the pan as the batter is very thick. Then carefully smooth it to fill in any gaps. Tapping the pan on the countertop helps. Pour on the rest of the "topping" and again plop spoonfuls into the pan till all batter is used.

Bake for 1 hour, or until a knife inserted in the center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Sprinkle powdered sugar over the cake if desired. Serves 12 to 16.

GLUTEN-FREE OPTION: Replace the flour with your preferred gluten-free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. (Sometimes baking is a little bit longer than normal, but since the texture and moistness is so wonderful, I can wait those few more minutes!)
