Avocado Pancakes

Yet again another avocado dish in my blog, couldn't stop using this avocado in all my dish. To accompany this avocado pancake i have also made a chilli chocolate sauce. Chilli and chocolate is quite an unusual combination for me when i first saw in UK. Later i came across so many recipes in the television with this combination. So i just want to give it a try and now i have no doubt that avocado, chilli and chocolate are meant for each other.
Ingredients:
For The Pancake:
Plain flour- 125 g
Milk- 300 ml
Melted butter- 1 tbsp
Egg-1
Sugar- 1 tbsp
Salt a pinch

For The Filling
Avocado- 1/2 mashed
Cream Cheese- 100 g
Sugar- 1 tbsp
Vanilla extract- 1 tsp

For The Sauce:
Dark Chocolate- 100 g
Red chilli flakes- 1/4 tsp
Butter-1 tsp
Milk- 1 tbsp

Method:
Mix all the pancake ingredients in a large bowl with a bubble whisk until it's smooth, set it aside.
Now prepare the filling by beating together the mashed avocado, cream cheese, sugar and extract.
Heat a non stick pan, add a laddle full of batter and swirl it around. After 2 minutes, turn it to the other side and cook for another 2 minutes. Repeat with the remaining batter.
Preheat the oven to 180 degree celsius. Take a pancake and place a spoonfull of filling in the middle of the pancake and close all the edges, place the pancake in baking tray, repeat with all the remaining pancakes.
Bake it in the preheated oven for 20 minutes.
Meanwhile prepare the chocolate sauce by melting the chocolate, milk and butter in a heatproof bowl placed on top of simmering pan of water. Once the chocolate and butter is melted, finally add the chilli flakes.
Take the pancakes out of the oven.
To serve arrange the pancakes on a serving plate and drizzle the chocolate sauce on top of it.
These pancakes can be served as a breakfast or as a light dessert.
