Ennai Kathrikai / Fried Brinjals Cooked in Spicy Gravy


It's time for us to Blog Hop again.  If you are  a regular reader here, you should be familiar about this event now. Blog Hop Wednesday is started by Radhika of Tickling Palates,  where we pair with different bloggers and cook from each other's blog.  To have a detailed view about the event please check it here.


This week I'm paired with Prabha's Samayal/ Cooking, where she has got a collection of delicious recipes, which is a real treat to your eyes.  To spice up this week hop I went for a spicy and tangy South Indian gravy, Ennai Kathrikai.  Ennai Kathrikai is a traditional South Indian dish.  This is a perfect combo with Pulavs and Briyani's.  Thank you Prabha for this yummy recipe and thank you Radhika for organizing this lovely event.

Preparation Time: 15 minutes
Cooking Time: 30 to 40 minutes
Serves 3 to 4

Ingredients:
Brinjals - 5 to 6
Onion- 1 small sized chopped
Tomato- 1 medium sized chopped
Tamarind- 1 gooseberry sized
Curry leaves- 7 to 8 leaves
Hing- a pich
Mustard seeds- 1/2 tsp
Fenugreek / Methi seeds- 1/4 tsp
Oil- 1/2 thsp fpr the gravy and oil for frying the brinjals
Salt to taste
To grind:
Methi/ Fenugreek seeds- 1/4 tsp
Coriander seeds- 1 1/2 tsp
Dried red chillies- 2
Cumin seeds- 1 tsp
Chana dhal- 1 tsp
Urad dhal- 1 tsp
Coconut- 1/2 tbsp

Method:
Dry roast all the ingredients to be ground in a pan until it releases a nice aroma.  Make it into a fine paste by grinding them in a mixer grinder.  Slit the brinjals at the bottom and immerse them in water to avoid discolouration.  Insert the spice paste into the brinjals using a butter knife and keep the remaining paste for the gravy.  Fry the stuffed brinjals  in oil for 3 to 4 minutes, remove it from oil and keep it aside.
Start preparing the gravy by heating the oil in a kadai or pan, splutterthe mustard seeds, fenugreek, curry leaves.  Add the chopped onions and fry it till the onions become nice and soft, then add the tomatoes, stir well.  Keep the flame in medium, cover the pan and cook till the tomatoes get soft and mushed up.
Now add the remaining paste and stir well, extract the juice from the tamarind by adding little water, add the tamarind extract to the gravy and salt to taste.  Cover the pan and let it simmer for about 5 minutes.  Now add the fried brinjals and gently stir it without breaking it.  If the gravy is too thick, add some water to dilute the gravy. Cover it and cook until the brinjals are soft and oil floats on top of the gravy. 
Serve it warm with plain rice and poppadoms , it also goes well with pulavs and briyani's.

Coconut Ladoo / Coconut Truffles


Every since I made the bounty candies  with coconut filling for Daring Baker's, all my dreams were full of this sweet coconut filling.  So I decided to make this coconut truffles with plenty of coconut to satisfy my cravings for coconut.

Coconut Ladoos are nothing but South Indian term for coconut truffles .  This easy to make sweet can easily win the hearts of your friends and family.  Enjoy making this delicious sweet for your next special occasion.

Preparation Time:  10 minutes
Cooking Time: 15 minutes
Makes 15 to 20 ladoos  (depends upon the size)

Ingredients:
Fresh grated coconut- 2 cups
Sweetened condensed milk- 1 cup
Milk- 1/4 cup
Cardamom powder- 1 tsp
Ghee or butter- 1/2 tbsp

Method:
Take a non stick pan or heavy bottomed pan and dry roast the 2 cups of coconut until it looks just dry and shrinks, do not brown the coconut.  Save 1/4 cup of coconut for later use to roll the ladoos. 
 Now again heat a heavy bottomed pan or non stick pan, add the ghee and coconut, then add the milk.  Cook it in medium to low heat until the coconut absorbs all the milk, keep stirring continuously.  Add the condensed milk and keep stirring continuously until it looks like a thick mass.  Finally add the cardamom powder and stir well.  Take it off from heat, let it cool down for a while.  Roll them into lemon size balls and then roll it in the coconut.  Store it in a air tight box and refrigerate it.

Note:
Non stick pan would be a better idea to make this sweet, otherwise the sweet might get burnt easily.  Also refrigerating the final ladoos will give you a firm sweet.  Particularly if you live in tropical climate and leave the sweet outside it might be too sticky and it will get ruined. So please refrigerate it as soon as it cools down.

Iftar Moments Hijri 1432: Roundup


Hurray! I'm so happy happy that I was able to post this Iftar Moments at last .  I was afraid that I might delay it till next Eid, Thank God, atleast now I did it.  I was supposed to post this in the first week of Ramadhan, which got postponed to a week later, then I decided after Eid, huh!  Finally finally after 2 months.  Unusually I was so tired  and felt sleepy every time when I was preparing for this roundup.  Believe it or not I did it nearly for 20 days, each day a very small part.  So my apologies to everyone for this unacceptable delay and my big thanks and hugs to everyone who submitted your entries and for waiting patiently  for the roundup.  Oh! Chocolate Truffles from Salma of Chasing My Rainbow 


Ingredients
* 1/2 pound good quality bittersweet chocolate, coarsely chopped
* 1/2 pound good quality semisweet chocolate, coarsely chopped
* 1 cup of heavy cream
* Zest of 1 orange
* 1/2 teaspoon of good vanilla extract
* One handful of cocoa powder
* One handful of ground almonds


Directions
1 Place the chocolate in a heat-proof mixing bowl.
2. Heat the cream in a small saucepan until it just starts to bubble. Pour the cream onto the chocolate. With a wire whisk, stir the cream and chocolate together until the chocolate is completely melted and the mixture is smooth. Whisk in the orange zest and vanilla. Refrigerate for an hour or until the chocolate mixture has hardened.
3. Take from fridge and add almonds to mixture
4. Using 2 small spoons, form round balls of the chocolate mixture. Then, using the palm of your hand, make the balls as round as possible and dip in the different toppings. Place onto a baking sheet lined with parchment paper and refrigerate for another hour. Remove from the fridge 10 minutes before serving.

Sprouts Sandwich for Blog Hop Wednesday


It's time to blog hop again, actually it was time to blog hop...  I should have posted this nearly two days back.  I have been so lame in blogging these days, I have to push my self to post something.  So here I'm posting late for Blog Hop Wednesday  by Radhika.

This week I have been paired with a wonderful blogger Nisha of  Nisha's Kitchen.  She has a wonderful collection of recipes, after battling between between few recipes, finally I made up mind with this Sprouts Sandwich.  This easy peasy rolls are ready in minutes if you have some ready made tortillas and sprouts on hands.  I tweaked the original recipe a tiny bit by using some ketchup to spread in the tortilla and skipped the sev part since I couldn't get some.  You can find the original recipe here.

Preparation Time: 10 minutes
Cooking Time:  10 minutes
Makes 4 rolls

Ingredients:
Tortillas- 4
Moong Sprouts- 150 g
Onion- 1 chopped
Tomato- 1 chopped
Carrot- 1 medium sized grated
Chat masala- 1 tsp
Ketchup- 1/2 tbsp
Salt to taste
Oil- 3 tsp

Method:
Heat oil in a pan,  add the chopped onion, tomato and saute for a minute or two.  Then add the grated carrot, sprouts, chat masala and salt. Quickly give it a stir and remove it from heat. Take a tortilla and heat it slightly in a pan, spread a thin layer of ketchup, place a spoonfull of filling in the middle.  Roll it tightly, cut into half and serve it immediately.

Note:
If you couldn't find tortillas, you can also use chappathi's.  Instead of ketchup you can use mayonnaise or any other spread which you favour.

Chocolate and Pistachio Biscotti for Sweet Punch September 2011

This time for Sweet Punch it's Italian Biscotti from Joy of Baking.  Biscotti's are a type of Italian biscuits which normally people enjoy it with their  black coffee.  I have attempted these biscotti's a few years back which was a total flop, this time  the recipe from Joy of baking is perfect.
No wonder Joy of Baking has so many fans.  The lesson which I learnt from my last time failure is whenever I try a recipe for the first time just follow the recipe as it is without changing any measurements.  Anyway we enjoyed this biscotti  a lot with our evening tea, instead of pistachios you can also add almonds, apricots or cranberries etc...


Recipe Source: Joy Of Baking
Preparation Time: 10 minutes
Cooking Time: 45 minutes

Ingredients:
All purpose flour- 225 g
Egg- 2
Sugar- 135 g
Vanilla essence- 1 tsp
Pistachios- 75 g
Dark chocolate chips- 100 g
Baking powder- 1 tsp

Method:

Preheat the oven to 180 degree Celsius.  Beat the sugar, essence and eggs with an electric beater  on high  speed until it is thick, pale and fluffy.  When you slowly raise the beater the batter will fall back slowly in small ribbons.  In a separate bowl sift the flour and baking powder.  Add the flour mixture to the egg mixture and stir to combine.  Finally fold the chocolate and pistachio into the dough.  Transfer the dough to a baking sheet lined with parchment paper.

Form the dough into a 30 cm long and 3 cm wide log.  Since the dough is quite sticky you might have to wet your hands before you shape the dough.  Bake the log in the preheated oven for 25 minutes or until the top looks firm.  Take it out from the oven and allow it to rest in a wire rack for 10 minutes.  Then slice the log with a sharp knife about 2 inch slices.  Place them in a baking sheet and bake for further 10 minutes, turning it over in the middle.  Take it out from the oven, allow it cool in a wire rack and store them in an air tight container.

Hello Foodies,

I have to say a big hello, it's like I'm back after a long break.  Yes for the past couple of weeks I was on a vacation and went to visit my mom and inlaws.  So very rarely I was able to get access to mail and blog.  Hopefully I'll catchup with you all in the oncoming weeks.  Also my apologies for cancelling the event last week, as I already said I was on a vacation and Eid mood, so just cancelled it.  Now coming to the selected recipes from Series 31.

3. The most controversial post-  I don't think there is any
4. The most helpful post,  I would say all my version of Instant Idli's, particularly this Polenta idli.  This Instant Idli's comes to my mind first, when I feel lay and don't want to cook.  It also helped some of my friends and readers too.

5. The post that was suprisingly successfull-  Ragi and Banana Muffin, I din't expect this recipe would be hit but suprisingly it received more than 1000 pageviews in less than 10 minutes.  I couldn't beleive when I saw the stastics in bloggers, I thought something must have went wrong.  Then I knew that one of my good blogger friend has stumbled it.

6. The post that did not get the attention it deserved- I can point most of the recipes in early days of my blogging,  Eat Well, Live Well roundup.  I wanted to have some healthy recipe event, but I don't think it reached the reader's well.  I'll continue this event again , once  I  feel relaxed and have some time.
7. The post I'm most proud of-  Orange and Almond Sponge.  I'm happy about this post ( by the grace of god), since it won first place in Manjula's Cooking Contest.
