Apple Custard Muffin : Something naughty for the weekend


Are you a kind of person who like to stay long in the bed during weekend morning, so long till the clock ticks twelve and still feeling lazy to wake up.  Ok you wake up now, once you brush your teeth the next thing on your head, what's for breakfast.  Bored and tired of having a bowl of cereals, orange juice, bread with egg for your whole weekdays and rushing to work.  It's time to keep aside all your guilty feelings, diet conscious and enjoy these scrumptious muffins for this weekend.


Late Sunday morning, sitting on the side of  a large bright window with lots of sunlight but no heat hitting at you, with a cup of coffee and  a muffin on your hand is a bliss.  Alright , you don't have to go to any dreamland to enjoy these simple muffins, juts your regular breakfast table should be more than enough. If  you are still not satisfied to have these muffins for your breakfast, why not try it for your afternoon tea, which would be just perfect too.

  Anyway I tried these muffins from one of my favourite cookbook which is is been resting in my self for a quite long time now.  So it's a triple tested and trusted recipe which you can totally rely on.  Hope I have convinced you to make these muffins :)

Preparation Time: 30 minutes
Cooking Time: 30- 35 minutes
Makes 6 muffin

Ingredients:
All purpose flour- 225 g
Sugar- 85 g
Butter- 45 g melted
Milk- 125 ml
Baking powder- 1 1/2 tsp
Egg- 1/2 of 1 whole egg
Bicarbonate of soda- 1/4 tsp
Thick custard- 30 ml
Apple pie filling- 2 tbsp ( recipe follows)
Brown sugar or jaggery powder- 2 tbsp
Grated nutmeg- 2 tsp
Cinnamon powder- 1/2 tsp

Method :
Sift the flour and baking powder and bicarbonate of soda in a large bowl, add sugar, 1 tsp of grated nutmeg and cinnamon powder to the flour mixture and mix it well .  Make a well  in the middle, add egg, milk and melted butter to the flour mixture, just stir to combine, do not over mix it.  The mixture should be quite lumpy. If the mixture is too thick like a dough, add a tbsp of milk to loosen the mixture.  The mixture should be similar to that of a thick batter consistency.
Preheat the oven to 180 degree Celsius.  Line the muffin tray with muffin cups.  Spoon half of the mixture equally in the 6 muffin cups. Using the back of a spoon, make a small well in the middle of the mixture, drop a teaspoon of custard and a teaspoon of apple filling in the well . Top with the remaining muffin mixture and sprinkle with brown sugar and grated nutmeg on top.  Bake it in the preheated oven for 25 to 30 minutes.  Stand in the pan for 5 minutes before turning to a wire rack. Serve warm.

Apple Pie Filling:
Ingredients:
Half of 1 apple
Juice of 1/2 a lemon
Sugar- 1/2 tbsp
Cinnamon powder- 1/4 tsp
Cornstarch- 2 tsp
Butter- 3 tsp

Method:
Peel and slice the apples thinly in small size.  Mix the apple, sugar, cinnamon powder and lemon juice in a bowl.   Let it rest in a bowl for 30 minutes.  After 30 minutes extract all the juice released from apples.  Add the extract, cornstarch and butter in a pan, let it boil.  When it starts boiling , add the apples and cover it cook till it looks thick and saucy.  Remove it from heat, let it cool down completely and use it for the recipe.

Rose Apple Muffin - Sweet Punch for August 2011

Hello Foodies,

 Okey I'm already a bit late for Sweet Punch this month, so I tried to post it today as early as possible.  This month our Sweet Punch team has chosen Strawberry Banana Muffin from Joy of Baking.  Yes it's Strawberry Banana Muffin, after looking out for strawberries a month, I gave up and thought will use cherries.
Finally I found that cherries season also finished.  I couldn't think of anything and decided to seek help with Sweet Punch.  Divya suggested me to use apple or mango, so finally it's Apple and Banana Muffin.  About these apple petals (hope it looks so ;-) ) on top, couple of days back, I remember one of  our fellow bloggers made these with a different muffin recipe.  Aw!  I have such a poor memory that I couldn't remember the person, sorry dear...

Those elegant shape immediately caught my attention, so I made those apple petals with these muffin.  Coming to the texture of the muffin, this is so great,  I loved it.  Do try it at home and enjoy with a cup of tea or even as dessert with some custard.

Preparation Time: 20 minutes
Cooking Time: 20-25 minutes
Makes 6 Muffins

Ingredients:
All purpose flour- 150 g
Sugar- 50 g
Egg- 1
Banana- 1(mashed)
Apple- 1 1/2
Vanilla essence- 1 tsp
Butter- 50 g (melted)
Baking Powder- 1 tsp
Bicarbonate of soda- 1/4 tsp
Lemon juice- a squeeze

Method:
Take half of the apple, peel and chop it.  Add a knob of butter in a pan, add the chop apples and cook it until softened. Let it cool down for a while.  Take the whole apple and slice it finely with skin.  Add a knob of butter to the pan, add the sliced apples and cook until it looks soft, add a squeeze of lemon juice and take it off from heat.
Sift the flour, baking powder and soda in a large bowl, add the sugar to this mixture and mix well. Add the chopped and cooked apples to the flour mixture and mix it well to coat the apples with flour mixture. Beat the eggs, vanilla essence and banana.  Add the melted butter to it and mix it again.  Add the dry ingredients to the wet ingredients and stir just to combine, do not overmix it, you might result in hard texture muffin.
Preheat the oven to 180 degree Celsius.  Grease the muffin tray with butter.  Spoon the mixture into the tray.  Now comes the fun part, start making the floral shapes on top.  You can either make the floralshapes separately in a plate and then keep it on top of the muffin mixture or start arranging them in the mixture itself.  If you arrange them in the mixture itself, it bind well with the texture , but your hands get messy and bit tough.  When you arrange it on the plate and then if you fix it, it's quite easy job, but it stands out separately.
Right to make it, just take the sliced and cooked apples and start forming it like rose petals by gently folding them.  Place it on top of the mixture.  Bake the muffins in the preheated oven for 20- 25 minutes.  Carefully insert a skewer on the side to check if it's cooked.  Remove it from the oven, let it cool down for 5 minutes in the cooling rack.  Serve it while they are still warm.

Note:
If you find the floral shapes on top are bit tough, you can skip that process and make just the muffin, which is delicious on it's own.

Ragi and Banana Muffin


This is a simple muffin modified from banana muffin.  My first experience with muffins was when we were in UK, it my earlier days there.  After a tired long day walk in a big shopping mall (Oracle), we went and sat down for some coffee in bb's, I think I remember the name right.
 My husband asked me what would you like with tea or coffee, actually I'm not a tea or coffee person and very rarely I used to have tea (green tea is an exceptional in that).  I said no tea, I'll just have some juice, also I'm not a big fan of cakes or chocolates until I lived in UK.  UK was the place where I was introduced to the world of chocolates, cakes, fudges etc.. and then I got addicted to these goodies, I think now you can guess why my blog is filled with so many cakes and stuff.

 Ok I got so much deviated from the main subject, coming to the point, so I said no cake or tea and ordered some juice.  My husband ordered some coffee and banana muffin for him, it was the last muffin left in the shop.
I just had a small bit of those muffins for taste, the warm muffins flavoured with cinnamon and nutmeg, topped with walnuts was really a bliss.  I loved it so much,  after that I din't give a small pinch of that muffin to my husband and I finished it off.  From that day, everytime when I go to town centre, I used to go to bb's and ask for this banana muffin and I never got one. After trying hard for so many times in different bb's all around UK, I was desperate to have these muffins.  Finally I managed to get a recipe from BBC, which I published it here, which was bit close to that.  Restaurant food cannot be always recreated in home since they'll have secret formula and special technique so we can aim only something close to that.  Banana muffins or cakes with walnuts is one of my favourite.  That's quite a long story for this humble muffins, huh!   Ok, ok don't worry I'll go to the recipe now, this recipe is just a slight modified version of those muffins.  I have replaced the plain flour with whole wheat and ragi and few adjustment in the flavourings also.  Let's have a look at the recipe now.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes 6 muffins

Ingredients:
Wheat flour or all purpose flour- 80 g
Ragi Flour- 40 g
Egg- 1
Banana- 1 medium sized (mashed)
Baking powder- 1 1/2 tsp
Bicarbonate of soda- 1/4 tsp
Jaggery or Sugar- 50 g
Vanilla essence- 1 tsp
Grated nutmeg- 1/4 tsp
Milk- 60 ml
Sunflower oil  or Olive oil- 30 ml
Walnuts-  6

Method:
Mix all the wet ingredients together in a large bowl.  Sift the dry ingredients in a bowl except sugar.  Mix the dry ingredients into wet ingredients along with sugar.  Don't overmix it, just gently give it a fold twice or thrice.
Preheat the oven to 180 degree Celsius, line the muffin tin with paper cases.  Spoon the mixture into the paper cases.  Broke the walnuts roughly and sprinkle on top of the mixture.  Bake it in the preheated oven 15 to 20 minutes or until the top of the muffin looks firm.  Take it out from the oven, leave it cool down in a wire rack for 5 minutes.  Remove it from the tin and serve it while they are still warm.

Eggless Poha Muffin


Poha is nothing but rice flakes.  This is my first trial with poha in muffins and eggless version.  I have to say it turned out quite successful . Simple ingredients which can be  mixed up in  minutes and bake it.  This simple and low fat muffin would make an ideal breakfast or snack.

Ingredients:
Poha or rice flakes- 50 g
Wholewheat flour- 150 g
Brown Sugar- 70 g
Vanilla essence- 1 tsp
Olive oil- 60 ml
Buttermilk- 150 ml
Banana- 1 mashed
Baking powder- 1 1/2 tsp
Bicarbonate of soda- 1/4 tsp


Method:
Soak the rice flakes in water for 10 minutes until they look soft and mushy.  Add all the dry ingredients to the rice flakes.
Mash the banana well, add the buttermilk, vanilla essence and oil, mix it well. Add the wet ingredients to the dry ingredients and mix until just combined. 
Preheat the oven to 190 degree Celsius.  Grease a muffin tray and line with muffin cases.  Spoon the mixture equally among the muffin cases.  Bake it in the preheated oven for 20 minutes or until a skewer inserted comes out clean.  Serve the muffin while they are still warm drizzled with some honey or maple syrup.


Note:
Do not overmix the muffin mix, it will result in a stodgy muffin.  If you are looking for a light and airy muffin, mix until they are just combined.

Squash Muffin


 Nearly a week back I saw this recipe in Suhaina's blog, the golden yellow colour and the moist texture of the muffin attracted me so much and I  desperately wanted to taste that muffin. Since I couldn't get pumpkins , I used Winter squash and it tasted absolutely amazing. The good thing about this muffin, it remained  moist and soft even after three days. Thank you Suhaina for this gorgeous muffin.


Preparation Time: 30 minutes
Cooking Time: 25 to 30 minutes
Makes 12 muffin

Ingredients:
Wholewheat flour- 1 cup
Rolled oats- 1/2 cup
Pureed squash- 1 cup
Olive oil- 3/4 cup
Brown Sugar- 3/4 cup
Eggs- 2
Orange zest- 1/2 tsp
Grated nutmeg- 1/2 tsp
Cinnamon powder- 1/2 tsp
Orange juice- 1 tbsp
Baking Powder- 1 1/2 tsp
Bicarbonate of soda- 1/2 tsp
Walnuts- 12
Rolles oats- 1 tbsp( to sprinkle on top)

Method:
Puree the squash:
Cook about 1 cup of squash in cooker by adding little water, cook upto 1 whistle. Once cooked, let it cool down and puree it in a blender and use 1 cup of puree for the recipe.

  Beat the olive oil and egg, until the sugar dissolves. Beat in the eggs, until it looks light and fluffy. Add the orange juice and all the flavours, mix it well. Then add the puréed squash and mix it well. Now sift the flour, baking powder, bicarb of soda and oats to this mixture and fold it gently.
  Preheat the oven to 190 degree Celsius. Line a muffin tray with muffin cases. Spoon the mixture into the cases, top it up with broken walnuts and rolled oats. Bake it in the preheated oven for 25 to 30 minutes or until a skewer inserted comes out clean.
You can keep this muffin up to 4 days stored in an air tight container.

Cranberry and Poppyseed Muffin

Cranberries are a source of  polyphenol antioxidants,phytochemicals which reduces the risk of cardiovascular diseases and helps improve the immune system.It also fights against the formation of kidney stones,reduces stomach ulcer,it's also good for skin.To read more about cranberries click here
Recipe adapted from the book BBC Good Food Magazine,101 Cakes and Bakes
Makes about 10 muffin
Ingredients:
Plain Flour-280g
Butter-100g
Eggs-2
Soured cream or butter milk-284 ml
Brown sugar-200g
Fresh or frozen cranberries-120g
Vanilla extract-1 tsp
Baking powder-2 tsp
Bicarbonate of soda-1 tsp
Poppy seeds-4 tsp
Maple syrup or honey to serve
Method:
Preheat the oven to 190 degree celsius.Grease and line a muffin tin with baking paper.
Melt the butter,leave it to cool,then beat in the eggs,soured cream and vanilla extract.
Sift the flour,baking powder and bicarbonate of soda,stir in the sugar and poppy seeds.
Stir the wet ingredients into the dry ingredients along with cranberries.
Fill the muffin cases with the mixture and bake for about 20 to 25 minutes or until a skewer inserted comes out clean.Lift it out and cool it on the wire rack,drizzle with maple syrup and eat while they are still warm.

Cherry and Almond Muffin


Recipe adapted from the book Good House keeping' Great Cakes'.
These muffins are best eaten on the day of making,can be served for breakfast or with afternoon tea.
Makes 12 muffin
Ingredients:
Plain flour-225 g
Brown sugar-75 g
Ground almonds-50 g
Milk-300 ml
Sunflower oil-50 ml
Egg-1
Dried cherries-100 g
Lemon juice-3 tbsp
Baking powder-1 tsp
Vanilla essence-1 tsp
Flakes almonds to decorate
Honey to serve
Method:
Preheat the oven to 190 degree celsius.Grease and line a muffin tin with 12 muffin cases.Sift together flour and baking powder,add the sugar,ground almonds and cherries,mix well.
Beat together egg,milk,oil,lemon juice and essence.Pour the wet ingredients into the dry ingredients,stir well until they are just combined. The mixture should look lumpy,do not overmix,the muffins will get tough.
Spoon the mixture into the prepared muffin cases.Sprinkle with flaked almonds,bake in the preheated oven for 25 minutes until well risen. Take it out,leave it to cool in the tin for 5 minutes,transfer to a wire rack to cool.

Banana muffin

Ingredients:


75g-melted butter


250g self-raising flour


1 tsp baking powder


½ tsp bicarbonate of soda


½ tsp ground cinnamon


½ tsp ground nutmeg


115g/4oz caster sugar


1 tsp vanilla extract


2 large ripe bananas mashed


2 medium eggs


125ml milk


10 walnut kernels (optional)


Method:


Preheat the oven to 180 degree celsius. Butter and line the muffin tin. Sift the flour and baking powder and all the dry ingredients except walnut. In a separate bowl mix the eggs, milk, melted butter, vanilla extract and mashed bananas. Mix the wet ingredients into the dry ingredients.


Spoon the mixture into the prepared tin and top with broken walnuts. Bake for 20 to 25 minutes.

Oat and Honey Muffins


These are really fluffy and light, ideal for breakfast or as a snack. Serve it while it is still warm.

Ingredients:


Plain Flour-250 gm


Porridge oats-85 gm


Baking powder-1 tbsp


Milk-200 ml


Sunflower oil-75 ml


Eggs-2


Raisins-45 gm


Light muscovado sugar-50 gm


Cinnamon-1/2 tsp


Clear Honey-5 tbsp


Method:


Preheat the oven to 200 degree celsius/ fan oven 180 degree celsius. Butter and line the muffin tin. In a large bowl combine flour, baking podwer,cinnamon,oats and raisins. In a separate bowl mix together the eggs,milk,sugar and honey. Stir this into the flour mixture until just combined, don't overmix, the mixture should be quite runny. Spoon the mixture into the muffin tin and bake for 20 to 25 minutes or until well risen and firm to touch.

Squash,Pumpkin Seed Muffins


These muffins are made with butternut squash or winter squash. They have a quiet dense texture, ideal for breakfast or with a cup of tea.

Makes 12


Ingredients:


Plain flour-280 gm


Butter-85 gm melted


Milk-175 ml


Light muscovado sugar-175 gm


Butternut squash -300 gm peeled and grated


Eggs-3


Baking Powder-1 tbsp


Ground Cinnamon- 2 tsp


Small handful of green pumpkin seeds


Method:


Preheat the oven to 200 degree celsius, fan oven 180 degree celsius. Butter and line the muffin tin with paper cases. Sift together flour,baking powder and cinnamon. In a large bowl mix the eggs,milk and butter. Add the sugar and beat well. Add the flour mixture and beat to give a lumpy batter. Stir the grated squash.


Fill the mixture into the muffin tin and sprinkle the pumpkin seeds on top. Bake for 20 to 25 minutes or until well risen and firm to touch.


Cool slightly in the tin and turn it onto a wire rack.
