ZEE's RECIPE: Eggs Benedict

One of my favorite breakfast dishes is Eggs Benedict. I especially like it with a bed of sautéed spinach and some beef bacon on the side. I try to minimize the amount of Hollandaise sauce since it very buttery and heavy - nevertheless, delicious! 
A little taste of salt and pepper goes a very long way with eggs, but I have to say the Palestinian in me always reaches for some Sumac seasoning as well. It reminds me of the scrambled eggs my dad makes and that always puts a smile on my face :)
When I was much younger, my dad used to wake us up for a delicious Sohoor (late-night meal before fasting for Ramadan) around 1-2am, and I remember that I would be so tired to the point where I would forget I ate and get mad at him for "not waking me up." Those are some of my cherished memories, and partly why I truly believe good food makes for good times! 

To get some fruits and veggies in your system, make sure to have a side of freshly chopped tomatoes on the side - and some freshly-squeezed Orange juice wouldn't hurt!

Here's a quick tip for making poached eggs:
1) Heat water in a stainless steel pot
2) When the water is almost at a boil, add a tea spoon of white vinegar
3) Turn the fire to medium-low heat
4) Stir the water as to create a "whirlpool"
5) Crack the egg in the center of the pot and use a spoon to gently fold over the whites and create a neat looking poached egg
6) Leave it to cook for a few minutes
7) Drain the egg on kitchen towel before serving it

BEST BITES: La Varenne - French Brasserie

So I finally got to visit the newest French restaurant in Qatar, and I must say... c'était fantastique! 

La Varenne serves top notch French cuisine. They have a breakfast and a lunch menu. The breakfast includes a very large variety of healthy options, as well as some freshly baked crepes, souffles, waffles, french toast, and croque madame etc. 

The lunch menu includes their signature starters such as the Tomato and Aubergine tart, soups, salads, fish, meat, sides and of course, my favorite, the dessert trolley. 

The chef, Stuart Collins, has previous experience with renowned Gordon Ramsey in both London and New York. Today he is the executive chef al La Varenne and The Anvil Rooms (steak house). 

All pastries and bread are baked fresh every morning by a very talented chef. 

They have a weekly business lunch menu, available on their website: www.lavarenne.qa 

I recommend trying their Rotisserie Chicken and Niçoise Salad!

ZEE's RECIPE: Blueberry Cheesecake (not baked)

One of the most popularly requested desserts by my friends, is my mum's blueberry cheesecake!
This cake has been in my family for many years and tasting it always reminds me of great times and celebrations.

I hope you can enjoy the recipe as much as we do. Please share it with your friends!
Mum's delicious Cheeckcake

Ingredients:

Base:
  • 1 large box of digestive biscuits 
  • 1 stick of butter (1/2 cup)
Cheesecake: 
  • 2 Philadelphia cream cheese packs (400 g)
  • 1 Nestle canned cream (170 g)
  • 1 sachet of Dream Whip powder + 1/2 cup of cold milk
  • 1 packet of Lemon Jell-o + 1 cup of hot water
Topping:
  • Canned blueberries (or) Fresh berries 

Method:
  1. Preheat your oven to 180 degrees Celsius / 360 degrees Fahrenheit 
  2. Use a plastic zipper bag to crush the digestive biscuits into crumbs
  3. In a large bowl, combine the biscuits and butter together
  4. Once the ingredients above are fully combined, place them neatly in the bottom of a cheesecake pan. (make sure you buy a special pan for cheesecakes)
  5. Place your pan into the oven for about 15 minutes
  6. In a glass bowl, mix your lemon packet of Jell-o with the hot water
  7. Allow the mixture to cool to room temperature 
  8. In a mixer, combine the cream cheese, Nestle cream, and the Dream Whip + Milk.
  9. Add the cooled Jell-o to the mixture and incorporate fully
  10. Ensure the consistency is heavy
  11. Once the pan has cooled from the oven, pour the mix over the digestive biscuits
  12. Allow the cheesecake to cool over night in the fridge 
  13. Use the blueberry topping to decorate the topping 
  14. Indulge

ZEE's LIFE: Macaroons

Okay guys, I just had to upload an entire post dedicated to my youngest sister, cutest munchkin and most talented girl I know, Salma! My sister, 12 years old, has been a ball of creativity since she was born. Our home is filled with cut-outs, paintings, sketchs, models, experiments, pens, paper, cardboard, clay, pastels etc. etc. etc. Everyday she gets better and better at what she does. Her perseverance and dedication to art and the kitchen is very inspiring!

But I have to say, she completely surprised me last night when she presented her latest project.

On a plate, she neatly displayed her very own macaroons! Not only where they pleasent for the eye, they were also crunchy and delicious! She made vanilla flavored macaroons with pink food coloring!

Watch out Ladurée, Salma's about to take over...

CREATIVITY: Sketch, London

If you're in London, then you NEED to check out Sketch!

Sketch is a very unique restaurant, located in Mayfair. It has attracted media coverage and celebrities from all around the world due to its myriad food, drink and entertainment styles. Not only is the restaurant artistic and thematic, but the food itself is very creative, bold and ground-breaking.

For example, this butter-nut squash soup I had came in three stages:
1) There was a delicious paste in the bottom of the bowl 
2) The waiter poured the hot soup into the bowl infront of me
3) He then used popcorn as garnish 

This was: a) delicious b) marvelous c) I had to take a picture.

REVIEW: Shake Shack

Soooo ... If you live in Doha, then I'm sure you've tried the "most-talked-about" burgers in town - Shake Shack. Although I really do enjoy the burgers themselves, I really feel like they are over-rated. I am not really a fan of the fries. They are too big and not crunchy enough for my taste.
What do you think of Shake Shack? Worth the hype?

Tabbouleh



*Serves 10
Ingredients:
·      1 cup of fine burghul
·      5 packs of parsley
·      ½ kg of fresh tomatoes
·      1 pack of fresh mint leaves
·      2 large onions
·      1 cup olive oil
·      4 freshly squeezed lemons
·      3 tbsp of salt
·      Pepper to taste

Method:
  •      Deep clean the burghul, wash and sieve
  •      Add lemon juice to burghul and let it sit
  •      Finely mince parsley and mint leaves
  •      Clean the parsley and mint and allow to air dry (room temp.)
  •      Finely dice the tomato and add it to burghul mixture
  •      Finely dice the onion and marinate with salt and black and white pepper
  •     Mix all ingredients and add olive oil to complete
  •      Lettuce leaves can be used for decoration
Food Fact: Burgul is a natural-weight-loss food - the whiter your Tabouleh is, the healthier! <3

Potato and Coriander Salad


*serves 3
Ingredients:
·      ½ kg of potato
·      ¼ cup of freshly squeezed lemon juice
·      1 tsp salt
·      ½ cup of minced coriander
·      4 cloves of garlic
·      ¼ cup olive oil

Method:
  • Boil potatoes and peel them
  • Dice potatoes into small cubes (option: fry potatoes lightly) Peel garlic and pound it with salt
  • Add the lemon juice and olive oil to the garlic, and mix Marinate the potato cubes with the garlic mixture
  • Add the minced coriander to the potatoes
  • Ready to Serve!
