Ingredient Spotlight: Turkey

This week, we’ve been focusing on Thanksgiving – breads and side dishes so far; today, we’re talking Turkey!

A few years ago, my dad suggested using bacon to self-baste the turkey; this resulted in a Bacon Wrapped Turkey with Bacon Infused Gravy.  This has become our favorite.

The leftovers from the turkey go into our Turkey Soup with Homemade Noodles every year.  So easy to make, and perfect for using the carcass too. 

A Turkey Pot Pie allows you to stretch your turkey leftovers among lots of tasty veggies and herbed biscuits.

Cheeseburger Tacos

This recipe has been pinned on my Pinterest Dinner board for months… in fact, I may have originally pinned it last year.  The wonderful world wide web, so many great recipes, so little time. 

I finally decided to give this one a try, and both Frog Prince and I really enjoyed it. 

We think you will too. 

Cheeseburger Tacos – Adapted from Skinny Mom’s Kitchen, Kelly & Camille

Ingredients

  • 4 flour or whole wheat tortillas (go larger than a fajita size)
  • ~20 Roasted tomato halves
  • Spinach
  • 1/2 lb. ground turkey
  • 1/4 lb. ground beef
  • Montreal steak seasoning, to taste
  • 1 tsp. dried minced onion
  • 1 T mustard, spicy brown
  • 1 T ketchup
  • Cheddar cheese

Directions

Begin by browning the ground beef and ground turkey together in a large skillet.  Season with Montreal Steak Seasoning (low-sodium, McCormick) and minced onion.  Drain excess grease. 

Add in ketchup and mustard, stir to combine.

In the center of a large tortilla, place seasoned meat and cheese; feel free to add extra mustard, ketchup or even pickles! 

Top with tomatoes and spinach.

Roll up and toast lightly on a griddle or in a pan, if desired.

Chicken Parmesan Burgers

After a week of rhubarb recipes, it’s time we change things up.  If you love rhubarb, don’t worry – the best is yet to come!  But, if you aren’t a fan of rhubarb, or don’t have it growing like a weed in your yard, then this is a recipe for you.  A change of pace. 

An amazing dinner – perfect for summer months.  I recommend topping it off with rhubarb dessert.  Sorry.  Just couldn’t resist that chance. 

The recipe comes from Iowa Girl Eats, an absolutely delightful blog.  Do go visit, if you haven’t been there. 

Krisitin’s original recipe was for a meatball sub, but as I was shaping the meatballs, I thought that burgers might be an even better option

Turns out, they were a whole lot easier to eat!  We also tossed in frozen spinach to the burgers and made our own buns and marinara. 

Either way you make them, you’re bound to enjoy. 

Chicken Parmesan Burgers – Adapted from Iowa Girl Eats

Ingredients

  • 1 medium zucchini
  • 1 1/2 tsp. minced garlic, divided
  • 1 C spinach (fresh or frozen, torn)
  • 1/3 C Panko bread crumbs
  • 1/3 C shredded Parmesan cheese
  • salt & pepper
  • 1 egg
  • 2 tsp. basil, divided
  • 1 lb. extra lean ground turkey or chicken
  • 1 C tomato sauce
  • 2 tsp. minced onion
  • 1 tsp. oregano
  • Mozzarella cheese
  • Whole Wheat Buns

Directions

Begin by shredding the zucchini.  Add to the shredded zucchini 1 tsp. minced garlic, 1/3 C panko bread crumbs, 1/3 C shredded Parmesan cheese, 1 C spinach (we used frozen), 1 egg, 1 tsp. of basil and a few pinches of pepper along with a dash of salt.

Mix in 1 lb. extra lean ground turkey or chicken.  Use clean hands (or a fork if you don’t like touching raw meat) and mix the meat mixture together. 

Shape the meat mixture into patties or meatballs, or a combination of both. 

Place meatballs and patties onto a lightly greased, tinfoil-covered cookie sheet.  Wash hands thoroughly after handling raw meat.   

Bake at 400 degrees for 20 minutes, or until internal temperature reaches 180 degrees. 

Meanwhile, prepare the marinara sauce by combining 1 C tomato sauce with 1/2 tsp. minced garlic, 1 tsp. basil, 1 tsp. oregano and 2 tsp. minced onion.  Stir well. 

Bring mixture to a slow simmer and simmer for 5 minutes, stirring occasionally. 

Slice the buns in half and layer on the burger or meatballs and mozzarella cheese slices. 

Return to the 400 degree oven for 5-6 minutes until cheese is melted. 

Top with marinara. 

Serve warm, with extra marinara for dipping.

DIY Hamburger Helper – Italian Style

So, this isn’t exactly a hamburger helper – but it has a similar approach being made in the skillet. 

In fact, I’d argue it’s better.  Real ingredients make a huge difference. 

You’ll find Italian sausage (we used turkey sausage), whole wheat pasta, spinach, tomatoes and mushrooms in this one, along with onion, garlic and parsley!

DIY Hamburger Helper – Italian Style

Ingredients

  • 12 oz. whole wheat pasta (we used penne)
  • 1/2 lb. ground Italian sausage
  • 1 can diced tomatoes, undrained
  • 8 oz. mushrooms, sliced
  • 1 T mined onion
  • 1 tsp. minced garlic
  • 1 tsp. parsley
  • 1 tsp. oregano or basil, your choice (or, do some of both!)
  • 1 can (14 oz) tomato sauce
  • 1 C spinach (fresh or frozen)
  • 1-2 T milk
  • 1/4 C Mozzarella cheese

Directions

Begin by browning the Italian sausage in a large skillet.  Drain.  Then, return the sausage to the skillet and add in 1 can diced tomatoes (undrained), 8 oz. sliced mushrooms, 1 T minced onion, 1 tsp. minced garlic, 1 tsp. parsley, and 1 tsp. mix of basil and oregano. 

Add in 1 can of tomato sauce and bring the skillet mixture to a low, slow simmer.  Simmer until the sauce thickens slightly – about 10 minutes.  Meanwhile, bring your pasta to a boil and cook according to package directions.  Drain. 

When sauce has thickened, add in 1 C spinach.  This can be fresh or frozen, but should be torn or chopped.  Add in 1-2 T milk at this point too.  Stir. 

Add in cooked pasta.  Stir well. 

Sprinkle the top with 1/4 C shredded mozzarella cheese.  Allow the cheese to melt. 

Serve warm.

Un-Stuffed Cabbage Roll Casserole

At this time of year, cabbage is cheap!  Ever wondered what to do with it?  I asked on Facebook and you had some great ideas.  Everything from tossing it into a stir fry to making runzas

I decided to use it in a recipe I pinned a long time ago

An un-stiffed cabbage roll casserole. 

It was delicious, and used an entire head of cabbage!  And, oh so much easier than rolling all those cabbage rolls. 

Leftovers are pretty great too.

Un-Stuffed Cabbage Roll Casserole – Adapted from Gina’s Skinny Recipes

Ingredients

  • 1/2 lb. lean ground beef
  • 1/2 lb. ground turkey
  • 2 T minced onion
  • 1 T minced garlic (fresh)
  • 1/2 tsp. paprika
  • 1 head green cabbage
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (15 oz.) tomato sauce
  • 1/4 cup water
  • 2 cups cooked brown rice 
  • 4 oz. Monterrey Jack and/or Cheddar cheese, shredded
  • Salt & pepper, as needed

Directions

Begin by browning the ground beef and turkey together in a large skillet.  Add in 2 T minced onion and 1 T minced garlic.  Season with 1/2 tsp. paprika and salt and pepper.  Brown the meats until no longer pink and then drain any excess grease. 

Add in 1 can diced tomatoes, undrained, and 1 can tomato sauce.  Rinse the cans out with water (totaling about 1/4 C) and add the rinse water to the skillet. 

Cover and simmer for 15 minutes, stirring occasionally.

Meanwhile, chop up the head of cabbage.  To do so, was the outside, then cut the head of cabbage in half.  Core carefully, and then rinse the cabbage again. 

Slice the cabbage into 1-2 inch pieces. 

Using a second, really large skillet, sauté the cabbage for 5-7 minutes, until partially cooked. 

Season with salt and pepper.  If you don’t have a big enough skillet, cook half the cabbage at a time. 

Transfer the half of the cabbage to the bottom of a lightly greased 9x13 glass baking dish.  When you do so, preheat your oven to 350 degrees. 

Now, add in the cooked 2 C of brown rice to your tomato dish simmering on the stove.  Heat until warmed. 

Layer half of the meat tomato mixture over the cabbage. 

Top that with remaining cabbage. 

Finish off the dish with the other half of the meat tomato sauce. 

Then, bake at 350 for 30-40 minutes, covered.   I use a cookie sheet to cover my pan – saves tinfoil!

Remove the cover after 35-40 minutes and top the dish with shredded cheese. 

Return to the oven and bake for an additional 15 minutes, until cheese is melted and bubbly. 

Serve warm.
