Berry Puff Pancake

This delicious puff pancake is a super fun morning treat. 

And, of course, I made it even better for you. 

We used 100% white whole wheat flour, 1 less egg, reduced the amount of butter and sugar, and used 2% milk rather than whole.  Loaded up the berries and served with with maple syrup rather than whipped cream. 

Delicious. 

Berry Puff Pancake – Adapted from Recipe Girl

Ingredients

  • 3 eggs
  • 1 C milk (we used 2%)
  • 1 C white whole wheat flour
  • 1/8 C white sugar (or try, 4 T honey)
  • 1/8 tsp. salt
  • 1 T butter
  • Splash of vanilla extract
  • 1 1/2 C berries (we used blueberry, raspberry, blackberry)
  • Pure maple syrup

Directions

Combine 3 eggs with 1 C milk and 1 C white whole wheat flour.  Stir.  Then, add in 1/8 C sugar, and a pinch of salt.  Using a blender (we used our immersion blender), blend until smooth. 

Meanwhile, melt 1 T butter into a large, oven-proof skillet.  Swirl the butter in the pan so that the bottom and sides are coated. 

Pour the batter into the skillet.

Toss the berries on top. 

We used frozen berries (we did not thaw them first) and they worked really well. 

Bake at 400 degrees for 20 minutes, until the pancake is set in the center and lightly browned on the edges. 

Cut into wedges and serve warm.

Blueberry Buttermilk Waffles

For my 30th birthday last weekend, Frog Prince took my favorite waffle recipe and combined it with my favorite pancake recipe.   

He really knows me well.  

These waffles are our new favorite – combining the deliciousness of blueberry pancakes with the crunch of waffles! 

Hope you enjoy them too!

Blueberry Buttermilk Waffles – Adapted from Waffles of Insane Greatness

Ingredients

  • 1 1/2 C white whole wheat flour
  • 1/2 C corn starch
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. sugar
  • 1 C buttermilk + 2 T
  • 1 C milk (or more buttermilk)
  • 1 T olive oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1 C frozen or fresh blueberries

Directions

*Sorry there are no step-by-step photos for this one!  Thanks to Frog Prince for breakfast… but, that translates into no photos.  Next time we make them, I’ll update!*

Begin by combining 1 1/2 C white whole wheat flour with 1/2 C corn starch in a large bowl.  Whisk to combine.  Then, add in 1 tsp. baking powder, 1/2 tsp. baking soda, 1/4 tsp. salt and 1 tsp. sugar or honey.  Stir well. 

Add in 1 C + 2 T buttermilk, 1 C milk (or additional buttermilk), 1 T olive oil, 2 eggs and 1 tsp. vanilla.  Stir well.  Allow the batter to sit for 15 minutes. 

Then, mix in 1 C frozen or fresh blueberries.

Pour into your waffle maker, and make according to manufacturers directions. 

Serve warm.

Whole Wheat English Muffin Hearts

The best part about spring semester and the course I teach is that the timing around Valentine’s Day could not be more perfect. 

Students arrive in class excited – it is the week of flowers, and chocolate dipped strawberries.  Perhaps some cherries too? 

They leave class realizing that pollen they might catch a whiff of from those beautiful flowers is really made up of male plant gametes

And, that cherry.  Oh yes – it’s an ovary you are eating

Chocolate {don’t go there, they say!}, well, that’s a seed.  And, seeds are embryonic plants.  

Nothing like throwing a little cramp into their Valentine’s Day. 

So, if you’d rather – have yourself a little wheat, I mean treat.  In these delicious English muffins you’ll find it hard to believe you’re actually eating endosperm – the starchy food source for growing plant embryo’s formed by sperm nuclei “fertilizing” two cells in the embryo sac. 

That’s what I thought. 

But they’re cute, right? 

Whole Wheat English Muffin Hearts – Adapted from Finding Joy in My Kitchen

Ingredients

  • 1 C warm water
  • 1/2 C warm milk
  • 3 C white whole wheat flour, divided
  • 3/4 tsp. salt
  • 2 tsp. honey
  • 1 T butter, melted
  • 2 tsp. yeast (instant dry)

Directions

Combine 1 C water and 1/2 C milk (both warm) into a large bowl.  Add in 2 tsp. honey and 3/4 tsp. salt.  Stir. 

Next up, add in 2 C white whole wheat flour along with 2 tsp. yeast.  Mix with a wooden spoon until a very wet dough is formed. 

Preheat your oven to 200 degrees for 5 minutes.  Then, turn the oven off.  Cover the dough mixture with a towel and place the bowl into the oven (which should now be off).  Allow the dough to rise in this warm environment for approximately 20 minutes. 

If you don’t feel like turning on your oven, microwave 1 C water until it boils.  Then, place the covered dough bowl into the microwave and allow it to sit closed, not in use for about 20 minutes. 

You’ll know the dough is ready when the sponge is doubled in size. 

Stir in the remaining 1 C white whole wheat flour along with 1 T melted butter.  You may need to add up to 1/2 C additional flour and “knead” the dough slightly to reduce stickiness.  But, do not over knead the dough!

Lightly flour or cornmeal a flat surface. 

Flatten the dough out to about 1/2 inch thickness. 

Using a heart-shaped cookie cutter, or feel free to free-form the heart with a knife, cut out heart-shapes from the dough. 

Reform extra dough and continue to cut out hearts until all dough is used up. 

Cover, and allow them to sit/rest for 10-15 minutes. 

Meanwhile, heat a griddle to 350 degrees. 

Next, lightly butter the griddle and immediately place the heart cut-outs onto the griddle.

Allow the muffins to cook on each side for 15 minutes.

You may wish to re-butter your griddle when you flip the muffins over, or scoot the English muffins into regions where there is butter still on the griddle. 

Serve warm, toasted or with your favorite jam.

40-Minute Pizza Bread

A good pizza bread makes an excellent addition to any party. 

Typical recipes, however, take hours to make.  This bread is a 40-minute recipe, which makes it possible for even an evening dinner!

I used the bread dough recipe from my 40-minute dinner rolls (recipe here) and made two loaves of this delicious pizza bread. 

Stuff it with your favorite fillings – the possibilities are endless. 

40-Minute Pizza Bread – Finding Joy in My Kitchen

Ingredients

  • 1 1/2 T yeast
  • 1 C + 1 T warm water
  • 1/8 C oil
  • 1/8 C sugar
  • 3/4 tsp. salt
  • 1 1/2 C whole wheat flour
  • 1 1/2 C white whole flour
  • Freezer-Friendly Pizza Sauce
  • Toppings: spinach, pepperoni, sauted mushrooms & bell peppers, black olives, etc. 
  • Shredded cheese (we used mozzarella & cheddar)
  • Olive oil
  • Italian seasoning

Directions

To make the dough, combine 1 1/2 T yeast (instant dry yeast) with 1 C + 1 T warm water in the base of your mixer.  Add in 1/8 C sugar, 1/8 C oil and 3/4 tsp. salt, and allow the yeast to foam. 

Then, pour in a total of 3 C flour.  We used half whole wheat and half white whole wheat. 

Knead the dough for 3-5 minutes until dough combines and is stretchy when pulled.

Cover and allow the dough to sit for 5 minutes while you prepare the toppings. 

Divide the dough in half.  Roll out each half on a lightly floured surface (if needed) until you have a large rectangle. 

Spread pizza sauce over the dough. 

Layer spinach over the sauce and arrange the toppings over the top. 

Use whatever toppings you would like. 

I do recommend, if using fresh veggies that you sauté them first so they decrease in moisture as that will prevent the pizza bread from becoming soggy. 

Sprinkle the cheese over the top. 

Roll up the dough, sealing the seam with a little water. 

Spritz with an olive oil spray and sprinkle with Italian seasoning, if desired. 

Repeat with the other half of dough, or freeze the dough for later!

Bake at 425 degrees for about 20 minutes. 

Slice and serve.

Greek Yogurt Parmesan Biscuits

Get this – these biscuits are made without butter, or whipping cream! 

Instead, they rely on Greek Yogurt. 

The result is a yummy biscuit that Frog Prince said I could “definitely make again”!

Greek Yogurt Parmesan Biscuits – Recipe idea from Mom

Ingredients

  • 1 C white whole wheat flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 C plain Greek Yogurt
  • 1/4 C Parmesan cheese

Directions

Whisk together 1 C white whole wheat flour, 1 1/2 tsp. baking powder and 1/2 tsp. salt. 

Make a well in the center of the flour and place 1 C plain Greek Yogurt. 

Top with 1/4 C Parmesan cheese.

 

Using a fork or spatula, cut in the Greek Yogurt to the flour mixture. 

Using your hand, press the dough together until much of it holds together.  Then, turn out onto a lightly floured surface.  Press into a 1/2 inch thick rectangle.

Place any remaining flour and cheese crumbs over the top of the dough.  Then, fold the dough in half. 

Flatten the dough to 1/2 inch thickness. 

Cut the dough into 2-inch squares.  I got 8-10 biscuits. 

Place on a lightly greased cookie sheet, or onto a pastry mat liner and place in an oven heated to 450 degrees. 

Bake at 450 for 12-14 minutes until biscuits are lightly browned. 

Serve warm with a soup, or slathered with butter & jelly!  Enjoy! 

Note: Biscuits are best consumed fresh; so, if you’re cooking for 1-2 people, cut the recipe in half.  This recipe easily fed 6 people.
