Cook, Eat, Delicious Desserts - Roundup

You know there is always a red line for everything we do in our life, at least for somethings.  I was thinking may be I have reached the line for my blogging, of course not for cooking and photography, I still do that.  Before reaching the line I have a few things which are quite unfinished in this blogging network, like this roundup and few other events too.  So my sincere apologies for everyone who waited for this roundup for a very long time now.

Apple Popcorn Munch

Today, my little sister is a quarter of a century old!  I can’t believe it. 

To celebrate – that is, if she stops by to visit today – we’ll enjoy some apple popcorn munch! 

Dried apples, sweet & salty popcorn with cinnamon make for an extra special treat on a beautiful fall day. 

Happy Birthday, L!  I love you. 

Apple Popcorn Munch

Ingredients

Directions

Prepare the popcorn – both sugared and regular, and mix the two together in a large bowl. 

Toss in the dried apple pieces, and sprinkle with cinnamon. 

Enjoy!

Roasted Brussels Sprouts with Applewood Smoked Bacon

With fall in full swing, it’s sadly time to start cleaning out the garden. 

Our first task – well, Frog Prince’s first task – was to pick our Brussels sprouts!  It was no small feat… look at the size of these plants!

We ended up with about 4 C of Brussels sprouts, and roasted them with applewood smoked bacon. 

It was a great side dish for a fall BBQ!

Roasted Brussels Sprouts with Applewood Smoked Bacon

Ingredients

  • 4 C Brussels sprouts
  • 1/2 C diced, cooked applewood smoked bacon
  • Olive oil

Directions

Begin by washing the Brussels sprouts and trimming the base off, as needed.  Toss the Brussels sprouts with olive oil. 

Arrange the Brussels sprouts on a foil-lined roasting tray.  Roast at 450 degrees for 20 minutes, tossing after 10 minutes. 

Then, toss in the 1/2 C cooked bacon. 

Continue roasting for another 5-7 minutes until veggies are crisp tender. 

Serve warm.

Maple Apple Sauté

One of the best pancake and waffle toppings in the fall is sautéed apples. 

These also double as a great topping to oatmeal, mixed into baked oatmeal, or tossed with granola & vanilla ice cream for an apple crisp ready in minutes.   

Or, use them in these amazing caramel apple cheesecake bars!

We’ve been making a version of these apples for years, but I decided to swap the brown sugar for maple syrup. 

We LOVED the result.  I’m guaranteeing you will too. 

Maple Apples

Ingredients

  • 3-4 medium apples (about 1 apple per person)
  • 1 T butter
  • 1 T maple syrup
  • Cinnamon, to taste

Directions

Wash {to remove the wax}, and slice your apples.  If desired, you can peel them (we usually do, as the peels don’t cook down like the fruit does). 

Then, melt 1 T butter in a large skillet. 

Add the apple slices and sauté over medium-high heat for 5-7 minutes, stirring frequently. 

Reduce heat to low, and continue cooking the apples until crisp-tender. 

Then, drizzle over the maple syrup. 

Season with cinnamon and serve warm. 

Add a dollop of ice cream for a real treat. 

Enjoy!

Note: You can easily make this using frozen apples; simply add the apples to the pan first, cook until the liquid/water is evaporated and apples are tender.  Then, add the butter, maple syrup and cinnamon.

Crockpot Stewed Tomato Minestrone

This is our first new soup recipe of the season – and it couldn’t be easier.

Stewed tomatoes, yummy veggies and delightful spices all dumped together in the crockpot to simmer all day long. 

You’ll come home to a delicious soup that is filling enough to be a meal, but light enough to serve alongside bread, grilled apple-cheddar sandwiches, or quesadilla

Crockpot Stewed Tomato Minestrone – Adapted from Gina’s Skinny Recipes

Ingredients

  • 2 T minced onion
  • 2 C sliced carrots
  • 1 celery stalk, sliced
  • 6 oz. mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 can (14 oz) stewed tomatoes
  • 1 C cooked white beans
  • 4 C chicken broth
  • 1 C water
  • 1 medium zucchini, quartered
  • 2 C spinach, fresh or frozen
  • 1 C uncooked, whole wheat pasta (we used shells)
  • 1 bay leaf
  • 1 tsp. basil
  • 1/2 tsp. parsley
  • salt & pepper, to taste
  • Parmesan cheese, for garnish

Directions

In the bottom of a 6 quart crockpot, place 2 C sliced carrots, 6 oz. sliced mushrooms (about 1 C, or 1 small can, drained), 1 stalk sliced celery and 2 garlic cloves. 

Add 1 can (undrained) stewed tomatoes, 4 C chicken or vegetable broth, & season with salt & pepper. 

Pile on the spices!  Minced onion, bay leaf, parsley & basil.  Yum, yum!

Cover and cook on low for 6-8 hours.  About 1 hour before serving, add in 1 C water, 1 medium zucchini/summer squash, quartered, 1 C spinach, 1 C whole wheat pasta, and 1 C white beans. 

Cook for 1 hour on high. 

Serve warm. 

Garnish with Parmesan cheese, if desired.
