Ingredient Spotlight: Eggplant

Eggplant.  Either you like them, you don’t like them or you haven’t tried them.  Which camp do you fall into?

The first time I had eggplant was at a middle eastern restaurant ages ago… it was deep fried and amazing.  Since then, I’ve looked for fun ways to use this veggie. 

Did you know, it’s related to the tomato and potato? 
And, that is has LDL cholesterol lowering chlorogenic acid?
Of course, it’s also a great source of fiber, Vitamin A, and potassium. 

Our favorite way to use eggplant is in Remy’s Ratatouille.  We must make this 3-4 times every August when our eggplant is ripe… love, love, love it. 

We also enjoy eggplant in Lucy’s Amazing Chili.

Breakfast Stuffed Peppers

These yummy bell peppers made for a great start to the day.  They were easy to put together, and the leftovers were delicious too. 

If you’re looking for a hearty back-to-school breakfast that relies on fresh garden produce, this is just for you!

Breakfast Stuffed Peppers – Inspired from Mama Nibbles
Serves 2-3

Ingredients

  • 2 red bell peppers
  • 2 strips bacon, cooked
  • 1 tsp. minced onion
  • 1/8 C crushed frozen spinach
  • 1/2 small summer squash
  • 6-8 grape or cherry tomatoes
  • Extra sharp white cheddar cheese, to taste
  • Salt and pepper
  • 2 eggs
  • 1/2 C milk

Directions

Begin by slicing the bell peppers in half and removing the core and seeds.  Place bell peppers onto a lightly greased, and tinfoil lined cookie sheet, open side up. 

Quarter half of a summer squash and slice the grape tomatoes into rounds.  Combine in a microwave safe bowl and season with salt, pepper and minced onion.  Microwave on high for 1 minute, stir and microwave for 30 seconds more. 

Meanwhile, chop up the cooked bacon and divide it evenly between the four bell pepper halves. Sprinkle some cheese on top.  Divide 1/8 C frozen chopped spinach among the bell peppers as well. 

Fill the bell peppers with the squash and tomato mixture.  You’ll want to make sure the bell peppers are nice and level, so use little balls of tinfoil, if needed, to level out the peppers.  This will help prevent run-off in the next step.

Whip the eggs and mix in 1/2 C milk.  Season with salt and pepper. 

Pour about 1/4 C of the egg mixture into each bell pepper.  Top with additional cheese. 

Bake at 375 for 25 minutes. 

Serve warm.

Indoor S’mores

Although a fire pit is nice, and a campfire preferred, sometimes you just don’t have access to either. 

I’ve seen some roast marshmallows over a gas stove top, but, what’s a girl to do if her stove is electric? 

Make indoor s’mores in the oven. 

Don’t knock it until you’ve tried it. 

Less than 5 minutes, and your marshmallow even gets toasty!

Indoor S’mores

Ingredients

  • Graham crackers
  • Hershey’s Special Dark Chocolate (chips or bar)
  • Marshmallows
  • (for an extra special treat, if you’re not allergic, peanut butter!)

Directions

Arrange graham cracker halves on a cookie sheet.  Top each half with dark chocolate and marshmallows. 

Place under the broiler for 2-3 minutes, until marshmallows are slightly toasted.  Don’t leave them there too long or you’ll have a burnt marshmallow and/or graham cracker!

Carefully remove the tray from the oven.  Top with the remaining graham cracker halves. 

Enjoy!

Hi ho, hi ho, it’s back to teaching I go….

Yes, this week the school year gears up.  New faculty arrive on campus this week, and I have the pleasure of working with them this week, and then monthly all year long.

Zucchini & Ham Tortellini Bake

That said, the transition back to school requires easy meals that use a lot of our garden produce. 

Last week, we tried some new zucchini and summer squash recipes and they were tasty!  The zucchini tortilla bake (second photo above) was delicious and the buttermilk zucchini pancakes (above) were a great breakfast.  Recipes coming soon.

Zucchini Pancakes – made with buttermilk and zucchini, and topped with blueberries?!  It’s like Lindsay from Pinch of Yum made this recipe just for me.

Lemon Zucchini Bread – I have yet to try lemon & zucchini together, but this bread from Barbara Bakes looks incredible!  You can even make it with Greek Yogurt.
